Personally, if the NAS is up and running, I’d migrate the home directory and anything else important from the desktop to that, and intend to network host those folders; set aside the 1TB, install the 2 TB, and do a fresh install and see if I can still get to everything happily.
Alternatively–if you want to preserve stuff locally–new drive in an enclosure, attach to desktop, boot from an install USB, fresh install to 2TB, reboot from 2TB, mount 1TB, migrate data, install 2TB. I don’t think there should be a UUID problem doing that, but even if there was you could still boot from the install stick and try manually fix it
As long as the compost is made safely. Gotta be, like, heated, industrial-scale composting. If you just throw a congress critter into the backyard mulch it’s still gonna be pretty risky.

I am begging you to take the energy you’re putting into convincing others to and redirect it toward learning to handle a rifle.
I do not. This is like the core of ADHD executive dysfunction. Stuff only happens in last minute panic mode. Meds help some. Anti-anxiety meds help some too. But I got through college by, frankly, just getting better at doing stuff at the last minute. Same thing that keeps me going in the corporate world.
(The pomodoro technique mentioned by another poster is also good though. It’s not a perfect solution, but in some situations it has helped me get started on something to know “I’m not committing to finishing this, I’m committing to working on it for 25 minutes. Surely I can handle suffering for 25 minutes”)
