Everytime I try this it’s disgusting. Tastes nothing like actual spaghetti. Just tastes like a plate full of cabbage with spaghetti sauce on it.
That said, I did find that spaghetti squash jap chae is pretty good. Doesn’t have the right texture as actual jap chae but the sauce carries it, and it works better.
Yeah people take the name literally and it doesn’t turn out well. I find using it to replace noddies in a heavy noodles casserole actually works, cause it’s baked and soaks in the flavor for a long time and you can make them extra saucy to make up for it too. There’s good recipes for it, but as a literal substitute for spaghetti noodles in sauce plopped on top spaghetti? That’s not a good recipe
No they aren’t rotten. It just tastes like vegetables covered in sauce, like cabbage does. Cabbage also tastes slightly sweet. It doesn’t have the same texture or taste as real pasta, unless you’re someone has never had pasta in your life and have nothing to compare it to.
I agree with your description but I still like spaghetti squash. It’s extremely bland/inoffensive by itself though and definitely needs some other flavors to carry it.
I use marinara/pepperoni/mozzarella and make like a pizza spaghetti. I’ve done chicken/bacon/alfredo for a chicken carbonara that turned out pretty good.

I’ve never been overfond of it myself, but I like it better with some cheese or meat in the sauce.
