They might not have a choice if that’s what tourists are paying in. Which is why I assume many countries that do use US dollars use it in the first place anyway because of tourism.
It’s also that a lot of those countries prefer USD over their own currency. Let’s not just blame ignorant tourists, who are often encouraged not to exchange currency.

I can’t afford to travel much but I thought it was pretty standard to have currency changing machines or stations in the airports?
